A pintxo (pronounced pintcho) is a small slice of bread on which to place a small ration of food. They are traditionally found in bars in the Spanish Basque Country.
Celebrations and rallies in the Basque Country are pretexts for cooking competitions between neighborhoods, villages, towns, gastronomic societies or friends. Thus, the tapas and pinchos have developed. The pintxoak are arranged on plates spread all over the counter, and are payable to the unit. We find all sorts, composed of various natural products, grilled, fried or cooked in sauce: fish, crustaceans, shellfish, sausage, meat, vegetables ... etc.
In bars, on each pincho is placed a small stick (palillo in Castilian) to count the small sticks held by each customer and calculate the amount payable at the end of the meal.
